Blue Cheese Buffalo Chicken Sandwich

I quickly wanted to share two very simple recipes for crockpots! We teach about cooking your meat items in a crock pot with some sort of sauce and serving on rice, in sandwiches or by itself with other sides.  So when we find a yummy combination of ingredients, we will share it with you to help expand simple crock pot meals.

So yesterday morning, I plopped in 3 organic chicken breasts into a crockpot with just a little bit of sesame oil and slow cooked for several hours until the chicken would natural shred.

I then divided the meat into two different crock pots to make two different types of chicken sandwiches – one spicy for the mom and dad and a not so spicy for the kids.

For the first sandwich, I took the shredded cooked chicken and covered it to taste with Frank’s Red Hot sauce and cooked in the crockpot on low for another hour.  This is the original buffalo sauce.  I then served it with a toasted bun and fresh crumbled blue cheese (that I got on markdown this week at the store) and a few more sprinkles of Frank’s Red Hot Sauce.  This sandwich was so super simple, and was so amazingly tasty.  I served it with a green salad with dried cranberries, fresh strawberries (that we got for .63 each lb!!) and Pomegranate/Raspberry vinaigrette to cool the heat! It was a simple, yet beautiful meal!

Italian Chicken Sandwich

For the second sandwich and for the kids, I took the shredded cooked chicken and covered it with an Italian Dressing to taste and cooked in the crockpot on low for another hour.   I then served it with a toasted bun and fresh shredded mozzarella cheese, plus some kids wanted a spread of mayo on the buns.  This sandwich was also super simple and our kids loved their tasty and less spicy version of shredded chicken sandwiches. They also had the same salad as us.

So here’s a quick summary:

We started with 3 organic chicken breasts, 2 sauces, buns and fresh foods we got on markdown or sale this last week and less than 15 minutes in total of active food prep throughout the day to make a yummy dinner for seven of us! This meal cost us around $7.50 and $3.00 of it was in the organic chicken and $1.49 for the organic greens in the salad.  The strawberries were .63, used about 1/5 of the Blue Cheese at $1.49 markdown (so about .30 worth) and the sesame buns were made fresh from our local bakery for $1.25 for the whole pack.  The only “coupon foods” were the Frank’s at .38 each bottle, 1/4 cup of Ocean Spray Dried Cranberries from a past deal, and the Ken’s Pomegranate Dressing which cost us less than .50.

With a crockpot, a few simple ingredients/sauces and fresh foods, you can always get a healthier meal (without the processed foods) for a lot less than people think!
